- 2 Ripe Avocados
- 1 cup Cherry or Grape Tomatoes, halved
- 4 ounces Fresh Mozzarella (Bocconcini or pearls), drained and halved
- 1/4 cup Fresh Basil leaves, chopped
- 2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Balsamic Glaze (or reduction)
- Salt, to taste
- Black Pepper, freshly ground, to taste
Instructions
- Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of the center flesh to make room for the stuffing, setting the removed avocado aside.
- In a medium bowl, gently combine the halved tomatoes, mozzarella pieces, and chopped basil.
- Drizzle the tomato and mozzarella mixture with the olive oil, salt, and pepper. Toss lightly to coat evenly.
- Spoon the Caprese mixture generously into the hollow of each avocado half.
- Drizzle the balsamic glaze over the stuffed avocados just before serving.
- Serve immediately and enjoy your quick appetizer.
Notes
- If you do not have bocconcini, you can dice a larger ball of fresh mozzarella.
- If you prefer a smoother texture, you can mash the scooped-out avocado flesh and mix it with the tomatoes and cheese.
- You can substitute balsamic vinegar for the glaze if you do not have glaze on hand, but reduce the amount due to its higher acidity.
