  • 1/2 teaspoon baking soda


Instructions

  1. Preheat your oven to 250°F (120°C). Spread the popped popcorn evenly onto two large baking sheets.
  2. In a large saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt. Stir until the sugar dissolves.
  3. Bring the mixture to a boil without stirring. Let it boil for 5 minutes.
  4. Remove the saucepan from the heat and stir in the vanilla extract and baking soda. The mixture will foam up.
  5. Pour the hot caramel evenly over the popcorn on the baking sheets. Stir gently to coat as much popcorn as possible.
  6. Bake for 1 hour, stirring every 15 minutes to ensure even coating and prevent sticking.
  7. Remove from the oven and let cool completely on the baking sheets. Break apart any clumps before serving or storing.
