- 1 cup unsalted butter
- 2 cups brown sugar, packed
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 250°F (120°C). Spread the popped popcorn evenly onto two large baking sheets.
- In a large saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt. Stir until the sugar dissolves.
- Bring the mixture to a boil without stirring. Let it boil for 5 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract and baking soda. The mixture will foam up.
- Pour the hot caramel evenly over the popcorn on the baking sheets. Stir gently to coat as much popcorn as possible.
- Bake for 1 hour, stirring every 15 minutes to ensure even coating and prevent sticking.
- Remove from the oven and let cool completely on the baking sheets. Break apart any clumps before serving or storing.
