- 1 cup unpopped popcorn kernels
- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 1/4 cup light corn syrup
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions
- Pop the popcorn kernels according to package directions. Remove any unpopped kernels. Place the popped popcorn in a large heatproof bowl.
- In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and corn syrup. Bring to a boil, stirring constantly.
- Reduce heat to medium-low and simmer for 5 minutes without stirring.
- Remove the saucepan from heat. Stir in the baking soda and vanilla extract. The mixture will foam up.
- Pour the hot caramel mixture over the popcorn in the bowl. Stir gently with a heatproof spatula to coat the popcorn evenly.
- Spread the caramel-coated popcorn in a single layer on a baking sheet lined with parchment paper.
- Bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes, until the caramel is set and crisp.
- Remove from the oven and let cool completely on the baking sheet. Break into pieces before serving.
Notes
- Use fresh popcorn kernels for the best results.
- Do not overcook the caramel, or it will become hard.
- Store leftover caramel popcorn in an airtight container at room temperature for up to 3 days.
