Description

Make delicious caramel popcorn at home with this simple recipe. It is perfect for a sweet treat.


Ingredients

  • 1 cup unpopped popcorn kernels
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract


Instructions

  1. Pop the popcorn kernels according to package directions. Remove any unpopped kernels. Place the popped popcorn in a large heatproof bowl.
  2. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and corn syrup. Bring to a boil, stirring constantly.
  3. Reduce heat to medium-low and simmer for 5 minutes without stirring.
  4. Remove the saucepan from heat. Stir in the baking soda and vanilla extract. The mixture will foam up.
  5. Pour the hot caramel mixture over the popcorn in the bowl. Stir gently with a heatproof spatula to coat the popcorn evenly.
  6. Spread the caramel-coated popcorn in a single layer on a baking sheet lined with parchment paper.
  7. Bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes, until the caramel is set and crisp.
  8. Remove from the oven and let cool completely on the baking sheet. Break into pieces before serving.

Notes

  • Use fresh popcorn kernels for the best results.
  • Do not overcook the caramel, or it will become hard.
  • Store leftover caramel popcorn in an airtight container at room temperature for up to 3 days.
