Description

Make delicious homemade caramel popcorn. This recipe is simple and creates a sweet, crunchy treat perfect for any occasion.

Ingredients

Scale
  • 12 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Spread the popped popcorn evenly onto two large baking sheets.
  3. In a large saucepan, melt the butter over medium heat.
  4. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly.
  5. Boil for 5 minutes without stirring.
  6. Remove the saucepan from the heat.
  7. Stir in the baking soda and vanilla extract. The mixture will foam up.
  8. Pour the hot caramel evenly over the popcorn on the baking sheets. Gently stir to coat the popcorn.
  9. Bake for 1 hour, stirring every 15 minutes to ensure even coating and crispness.
  10. Remove from the oven and let cool completely on the baking sheets before breaking into pieces.

Notes

  • Ensure your popcorn is fully popped and free from unpopped kernels.
  • Use a large saucepan for the caramel to avoid overflow when the baking soda is added.
  • Stirring the popcorn every 15 minutes during baking helps achieve a consistent texture.
  • Store caramel popcorn in an airtight container at room temperature for up to a week.
