Description

Make these simple, festive cookies featuring a buttery cracker base, a chewy caramel topping, and a chocolate drizzle. They are perfect for holiday cookie exchanges.

Ingredients

Scale
  • 1 sleeve Ritz Crackers (about 36 crackers)
  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup milk
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil (optional, for smoother drizzle)
  • 1/2 cup semi-sweet chocolate chips (for topping)
  • 1 teaspoon vanilla extract
  • Holiday sprinkles (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Arrange the Ritz crackers in a single layer on the prepared baking sheet.
  3. In a small saucepan, combine the brown sugar, butter, and milk.
  4. Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a full boil.
  5. Boil the caramel mixture for exactly 1 minute, stirring continuously. Remove from heat immediately.
  6. Stir in the vanilla extract.
  7. Pour the hot caramel mixture evenly over the crackers, ensuring each cracker gets some topping.
  8. Bake for 5 to 7 minutes, or until the caramel is bubbly and slightly darkened. Watch closely to prevent burning.
  9. Remove the baking sheet from the oven and let the crackers cool completely on the sheet until the caramel sets firm, about 30 minutes.
  10. While cooling, prepare the chocolate topping. Place the 1/2 cup of chocolate chips and the shortening (if using) in a microwave-safe bowl.
  11. Microwave in 30-second intervals, stirring between each interval, until the chocolate is smooth.
  12. Drizzle the melted chocolate over the cooled caramel crackers.
  13. Immediately sprinkle with holiday sprinkles, if desired.
  14. Allow the chocolate to set completely before serving or storing.

Notes

  • Do not overcook the caramel mixture once it boils; 1 minute is the target time for the right texture.
  • If you prefer a full chocolate coating instead of a drizzle, melt 1 1/2 cups of chocolate chips and dip the cooled crackers halfway.
  • Store these cookies in an airtight container at room temperature.
