Description

A straightforward recipe for a flavorful carrot and ginger soup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound carrots, peeled and chopped
  • 1 inch fresh ginger, grated
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and ginger; cook for 1 minute until fragrant.
  4. Add carrots and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer until carrots are tender, about 15-20 minutes.
  6. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  7. Return soup to the pot if necessary, season with salt and pepper, and heat through before serving.

Notes

  • For a creamier texture, add 1/4 cup of coconut milk during the final heating stage.
  • Adjust the amount of ginger to match your preferred spice level.
