Description
This recipe guides you through creating Charred Mexican Street Corn, focusing on achieving a smoky flavor with direct flame or broiler techniques. It’s a simple, delicious dish perfect for any occasion.
Ingredients
Scale
- 4 ears of corn, husked
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream or Mexican crema
- 1/4 cup crumbled cotija cheese
- 1 tablespoon fresh lime juice
- 1/4 teaspoon chili powder, plus more for dusting
- Salt to taste
- Fresh cilantro, chopped, for garnish (optional)
Instructions
- Prepare the corn: Remove the husks and silk from the corn ears.
- Char the corn: Use a grill, gas burner, or broiler to char the corn. For a grill or gas burner, place corn directly over medium-high heat, turning frequently until kernels are charred in spots, about 8-10 minutes. For a broiler, place corn on a baking sheet and broil, turning occasionally, until charred, about 10-15 minutes.
- Make the crema: In a small bowl, combine mayonnaise, sour cream or Mexican crema, crumbled cotija cheese, lime juice, and 1/4 teaspoon chili powder. Mix well.
- Season the corn: Once the corn is charred, spread the crema mixture evenly over each ear.
- Garnish and serve: Sprinkle with additional chili powder and fresh cilantro, if desired. Serve immediately.
Notes
- For extra flavor, you can add a pinch of garlic powder to the crema mixture.
- If cotija cheese is unavailable, use crumbled feta cheese as a substitute.
- Adjust the amount of chili powder to your spice preference.
