Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken or vegetable broth and bring to a simmer.
  5. Add the chopped apples and cook until they are tender, about 8-10 minutes.
  6. Reduce the heat to low. Gradually stir in the shredded cheddar cheese until it is melted and the soup is smooth.
