Description

Follow these steps to make tender chicken breasts filled with a savory mixture of asparagus and cheese, baked until golden.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 bunch asparagus, trimmed and chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish.
  2. In a small skillet, heat the olive oil over medium heat. Add the chopped asparagus and minced garlic. Cook until the asparagus is tender-crisp, about 4 minutes. Remove from heat and let cool slightly.
  3. In a medium bowl, combine the softened cream cheese, mozzarella cheese, and Parmesan cheese. Mix well.
  4. Stir the cooked asparagus and garlic mixture into the cheese mixture. Season with salt and pepper.
  5. Take each chicken breast and carefully cut a deep pocket into the thickest side, being careful not to cut all the way through.
  6. Spoon the cheese and asparagus filling evenly into the pockets of the four chicken breasts. Secure the opening with toothpicks if necessary.
  7. Place the stuffed chicken breasts in the prepared baking dish. Season the outside of the chicken with salt and pepper.
  8. Bake for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the juices run clear.
  9. Remove the toothpicks before serving.

Notes

  • For extra flavor, you can sear the stuffed chicken breasts in an oven-safe skillet for 2 minutes per side before baking.
  • If you prefer a crispier top, sprinkle a little extra Parmesan cheese over the chicken before the last 5 minutes of baking.
  • Use fresh, thin asparagus for the best texture in the stuffing.
