Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups sliced yellow squash (about 2 medium)
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese, divided
  • Salt and pepper to taste
  • 1/2 cup crushed butter crackers or breadcrumbs


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Add the sliced squash to the skillet and cook for about 5-7 minutes, stirring occasionally, until slightly tender.
  4. In a medium bowl, combine the cream of mushroom soup and milk. Stir until smooth.
  5. Add half of the cheddar cheese and half of the Monterey Jack cheese to the soup mixture. Stir to combine.
  6. Add the cooked squash and onion mixture to the cheese sauce. Season with salt and pepper to taste.
  7. Pour the mixture into a greased 8×8 inch baking dish.
  8. In a small bowl, combine the crushed crackers and the remaining cheddar and Monterey Jack cheese. Sprinkle this topping evenly over the casserole.
  9. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown and melted.
  10. Let stand for 5 minutes before serving.
