- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups sliced yellow squash (about 2 medium)
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese, divided
- 1/2 cup shredded Monterey Jack cheese, divided
- Salt and pepper to taste
- 1/2 cup crushed butter crackers or breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Add the sliced squash to the skillet and cook for about 5-7 minutes, stirring occasionally, until slightly tender.
- In a medium bowl, combine the cream of mushroom soup and milk. Stir until smooth.
- Add half of the cheddar cheese and half of the Monterey Jack cheese to the soup mixture. Stir to combine.
- Add the cooked squash and onion mixture to the cheese sauce. Season with salt and pepper to taste.
- Pour the mixture into a greased 8×8 inch baking dish.
- In a small bowl, combine the crushed crackers and the remaining cheddar and Monterey Jack cheese. Sprinkle this topping evenly over the casserole.
- Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown and melted.
- Let stand for 5 minutes before serving.
