- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled queso fresco
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: additional chili powder for garnish
- Optional: extra cheese for garnish
Instructions
- Preheat your grill or oven to medium-high heat.
- Brush the corn with olive oil and grill or roast until tender and slightly charred, about 10-15 minutes.
- In a small bowl, whisk together the mayonnaise, sour cream, Parmesan cheese, queso fresco, cilantro, lime juice, chili powder, salt, and pepper.
- Once the corn is cooked, spread the cheese mixture evenly over each ear of corn.
- Return the corn to the grill or oven for a few more minutes until the cheese is melted and bubbly.
- Garnish with extra chili powder and cheese if desired.
