  • 2 tablespoons unsalted butter
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup crumbled queso fresco, plus more for garnish
  • 1/4 cup grated Parmesan cheese
  • 2 ounces cream cheese, softened
  • 1/4 teaspoon chili powder, plus more for garnish
  • 1/8 teaspoon cayenne pepper (optional, for heat)
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 1 lime, cut into wedges, for serving
  • Salt and black pepper to taste


Instructions

  1. Melt the butter in a large skillet or pot over medium heat. Add the corn kernels and cook, stirring occasionally, for 5-7 minutes, or until the corn is tender and slightly charred.
  2. While the corn cooks, prepare the cheesy sauce. In a medium bowl, combine the mayonnaise, sour cream or Mexican crema, 1/2 cup crumbled queso fresco, Parmesan cheese, softened cream cheese, chili powder, and cayenne pepper (if using). Mix well until smooth and creamy.
  3. Once the corn is cooked, remove it from the heat. Pour the cheesy sauce over the corn and stir gently to coat all the kernels evenly.
  4. Stir in the 2 tablespoons of chopped fresh cilantro. Season with salt and black pepper to taste.
  5. Transfer the cheesy street corn to a serving bowl. Garnish with additional crumbled queso fresco, a sprinkle of chili powder, and more fresh cilantro, if desired.
  6. Serve immediately with lime wedges on the side for squeezing over the corn.

Notes

  • For a spicier kick, add a pinch more cayenne pepper or a dash of hot sauce to the sauce.
  • If using frozen corn, do not thaw it before cooking; simply add it directly to the hot skillet.
  • You can prepare the cheesy sauce ahead of time and store it in the refrigerator for up to 2 days. Warm it slightly before mixing with the hot corn.
