Description
A simple and comforting casserole featuring summer squash and melted cheese.
Ingredients

- 3 cups sliced yellow summer squash
- 1/2 cup chopped onion
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup dry bread crumbs
- 2 tablespoons melted butter
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the sliced squash, chopped onion, condensed soup, milk, salt, and pepper. Mix well.
- Pour the mixture into a greased 2-quart baking dish.
- Sprinkle the shredded cheddar cheese over the top of the squash mixture.
- In a small bowl, combine the dry bread crumbs and melted butter. Mix until the bread crumbs are coated.
- Sprinkle the bread crumb mixture evenly over the cheese.
- Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let stand for a few minutes before serving.
Notes
- You can use other types of summer squash like zucchini.
- Feel free to use a different type of condensed soup if you prefer.
- Add other vegetables like bell peppers or corn for extra flavor and color.
