Description

A simple and comforting casserole featuring summer squash and melted cheese.


Ingredients

  • 3 cups sliced yellow summer squash
  • 1/2 cup chopped onion
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup dry bread crumbs
  • 2 tablespoons melted butter


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the sliced squash, chopped onion, condensed soup, milk, salt, and pepper. Mix well.
  3. Pour the mixture into a greased 2-quart baking dish.
  4. Sprinkle the shredded cheddar cheese over the top of the squash mixture.
  5. In a small bowl, combine the dry bread crumbs and melted butter. Mix until the bread crumbs are coated.
  6. Sprinkle the bread crumb mixture evenly over the cheese.
  7. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let stand for a few minutes before serving.

Notes

  • You can use other types of summer squash like zucchini.
  • Feel free to use a different type of condensed soup if you prefer.
