Description

Make your own chewy homemade granola bars. They are simple to make and taste much better than store-bought. You can customize them with your favorite add-ins.


Ingredients

Scale
  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup nut butter (peanut, almond, or cashew)
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (chocolate chips, dried fruit, nuts, seeds)


Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the rolled oats and salt.
  3. In a small saucepan over medium-low heat, melt together the honey (or maple syrup), nut butter, and coconut oil. Stir until smooth.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the wet mixture over the oats and stir until everything is well combined and coated.
  6. Fold in your chosen mix-ins.
  7. Press the mixture firmly and evenly into the prepared baking pan. Use another piece of parchment paper or the back of a spoon to really compact it down.
  8. Refrigerate for at least 2 hours, or until firm.
  9. Once firm, lift the granola from the pan using the parchment paper overhang.
  10. Cut into bars. Store in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer.

Notes

  • For best results, use old-fashioned rolled oats, not instant oats, for the right texture.
  • Press the mixture down very firmly into the pan to ensure the bars hold together.
  • Customize your bars with different nuts, seeds, dried fruits, or spices like cinnamon.
  • For a vegan option, use maple syrup instead of honey.
