Description

Make chewy homemade granola bars. These soft granola bars are a simple, delicious snack.

Ingredients

Scale
  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsalted butter or coconut oil
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup add-ins (chocolate chips, dried fruit, nuts, seeds)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the rolled oats and your chosen add-ins.
  3. In a small saucepan, melt the butter or coconut oil over medium heat.
  4. Stir in the honey or maple syrup, brown sugar, vanilla extract, and salt. Bring to a gentle simmer, stirring until the sugar dissolves.
  5. Pour the wet mixture over the oat mixture. Stir well until all the oats are evenly coated.
  6. Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spoon or a piece of parchment paper to compact it tightly.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Once firm, use the parchment paper to lift the granola bar slab from the pan.
  9. Cut into desired bar shapes and enjoy.

Notes

  • For extra chewiness, you can lightly toast the oats before mixing.
  • Store bars in an airtight container at room temperature for up to one week, or in the refrigerator for longer.
  • Customize your bars with different nuts, seeds, or dried fruits.
