Description

Make your own chewy granola bars. They are simple to make and better than store-bought.


Ingredients

Scale
  • 2 cups rolled oats
  • 1/2 cup crisp rice cereal
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup shredded coconut (optional)
  • 1/2 cup nut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (chocolate chips, dried fruit, etc.)


Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the rolled oats, crisp rice cereal, chopped nuts (if using), and shredded coconut (if using).
  3. In a small saucepan over medium-low heat, combine the nut butter, honey or maple syrup, brown sugar, vanilla extract, and salt. Stir until everything is melted and smooth.
  4. Pour the wet mixture over the dry ingredients in the large bowl. Stir until everything is well combined.
  5. Fold in your desired mix-ins.
  6. Press the mixture evenly into the prepared baking pan. Use another piece of parchment paper or the bottom of a glass to really press it down firmly. This helps the bars hold their shape.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Once firm, lift the granola from the pan using the parchment paper overhang. Cut into bars.
  9. Store the granola bars in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks.

  • You can customize these bars with your favorite nuts, seeds, dried fruits, or chocolate.
  • For a gluten-free option, use certified gluten-free rolled oats.
  • For a vegan option, use maple syrup instead of honey and ensure your chocolate chips are dairy-free.
