Description

Chewy Zucchini Oatmeal Bars are a delightful and easy treat that combines wholesome ingredients with a hint of sweetness. Perfect for a snack or a light dessert.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a medium bowl, whisk together flour, oats, brown sugar, baking soda, and salt.
  3. Pour in the melted butter and vanilla extract. Stir until well combined and crumbly.
  4. Gently fold in the grated zucchini and chocolate chips, if using.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes, or until golden brown and set.
  7. Let cool completely in the pan before cutting into bars.

Notes

  • Make sure to squeeze the excess moisture out of the grated zucchini using a paper towel or cheesecloth.
  • You can substitute other add-ins like nuts, dried cranberries, or other types of chips.
  • Store the bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
