Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a medium bowl, whisk together flour, oats, brown sugar, baking soda, and salt.
- Pour in the melted butter and vanilla extract. Stir until well combined and crumbly.
- Gently fold in the grated zucchini and chocolate chips, if using.
- Press the mixture evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until golden brown and set.
- Let cool completely in the pan before cutting into bars.
Notes
- Make sure to squeeze the excess moisture out of the grated zucchini using a paper towel or cheesecloth.
