- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 large apple, cored and sliced
- 1/2 cup chopped yellow onion
- 1/2 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet. Season with salt, pepper, garlic powder, and paprika. Cook until browned on all sides and mostly cooked through, about 5-7 minutes.
- Add the sliced apple and chopped onion to the skillet. Cook, stirring occasionally, until the apples are tender and the onions are softened, about 5-7 minutes.
- Sprinkle the shredded cheddar cheese over the chicken, apple, and onion mixture. Cover the skillet and cook for 1-2 minutes, or until the cheese is melted and bubbly.
- Serve hot directly from the skillet.
Notes
- You can use chicken breast instead of thighs if preferred, but adjust cooking time to ensure it doesn’t dry out.
- Any type of firm apple will work well, such as Honeycrisp, Fuji, or Gala.
- For a touch of sweetness, you can add a drizzle of maple syrup in the last minute of cooking.
