- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 tablespoons fajita seasoning
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned.
- Add the sliced onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
- Stir in the fajita seasoning and cook for another minute until fragrant.
- Stuff the bell peppers evenly with the chicken and vegetable mixture.
- Place the stuffed peppers in a baking dish.
- Bake for 25-30 minutes, or until the peppers are tender and the chicken is cooked through.
- Top with shredded cheese during the last 5 minutes of baking, if desired.
