  • 4 boneless, skinless chicken breasts, pounded thin into cutlets
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Place flour, salt, and pepper on a plate. Dredge each chicken cutlet lightly in the flour mixture, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken cutlets for 3-4 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
  4. Add the sliced mushrooms to the same skillet. Cook for 5-7 minutes until they release their moisture and brown.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.
  7. Stir in the chicken broth and bring the mixture to a simmer. Cook for 2 minutes until the sauce thickens slightly.
  8. Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy.
  9. Return the cooked chicken cutlets to the skillet. Spoon the sauce over the chicken. Heat through for 1-2 minutes.
  10. Garnish with fresh parsley before serving.

Notes

  • Serve this dish immediately over mashed potatoes, creamy polenta, or pasta to soak up the sauce.
  • For a deeper mushroom flavor, use a mix of cremini and shiitake mushrooms.
