- 4 boneless, skinless chicken breasts, pounded thin into cutlets
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup dry Marsala wine
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
- Place flour, salt, and pepper on a plate. Dredge each chicken cutlet lightly in the flour mixture, shaking off excess.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the chicken cutlets for 3-4 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
- Add the sliced mushrooms to the same skillet. Cook for 5-7 minutes until they release their moisture and brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.
- Stir in the chicken broth and bring the mixture to a simmer. Cook for 2 minutes until the sauce thickens slightly.
- Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy.
- Return the cooked chicken cutlets to the skillet. Spoon the sauce over the chicken. Heat through for 1-2 minutes.
- Garnish with fresh parsley before serving.

- Serve this dish immediately over mashed potatoes, creamy polenta, or pasta to soak up the sauce.
- For a deeper mushroom flavor, use a mix of cremini and shiitake mushrooms.
- If you prefer a less creamy sauce, omit the heavy cream and reduce the broth slightly.
