  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more until fragrant.
  3. Stir in garam masala, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Pour in crushed tomatoes and bring to a simmer. Return chicken to the skillet.
  5. Reduce heat to low, cover, and simmer for 10 minutes, or until chicken is cooked through.
  6. Stir in heavy cream and cilantro. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra cilantro if desired.
