- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 (15 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more until fragrant.
- Stir in garam masala, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Pour in crushed tomatoes and bring to a simmer. Return chicken to the skillet.
- Reduce heat to low, cover, and simmer for 10 minutes, or until chicken is cooked through.
- Stir in heavy cream and cilantro. Season with salt and pepper to taste.
- Serve hot, garnished with extra cilantro if desired.
