Recreate your favorite fast-casual chipotle chicken burrito bowl at home with this easy-to-follow recipe. Packed with seasoned chicken, fresh veggies, and flavorful toppings, it’s a satisfying meal that’s perfect for any night of the week.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 tablespoon lime juice
  • 1 cup cooked white or brown rice
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup shredded Monterey Jack or cheddar cheese
  • 1/2 avocado, sliced
  • 1/4 cup pickled jalapeños (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  3. Place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the center. Let rest for 5 minutes, then shred or dice.
  4. While chicken is baking, prepare your bowl components. Warm rice and black beans if desired.
  5. To assemble, divide rice between bowls. Top with seasoned chicken, black beans, corn, salsa, cilantro, sour cream or Greek yogurt, cheese, avocado, and jalapeños (if using).

Notes

  • For an extra kick, add a pinch of cayenne pepper to the chicken seasoning.
  • Feel free to customize your bowl with your favorite toppings, such as shredded lettuce, pico de gallo, or guacamole.
  • If you don’t have time to cook chicken, rotisserie chicken can be used as a shortcut.
