- 1 cup glutinous rice flour
- 1/4 cup granulated sugar
- 1/2 cup water
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
- 1/4 cup rainbow sprinkles
Instructions
- In a bowl, whisk together glutinous rice flour, sugar, baking powder, and salt.
- Add water and vegetable oil to the dry ingredients. Mix until a smooth dough forms.
- Knead the dough for 2-3 minutes until it’s pliable.
- Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it slightly and poke a hole in the center to form a donut shape.
- Heat about 2 inches of vegetable oil in a pot over medium heat.
- Carefully fry the donuts for 2-3 minutes per side, until golden brown.
- Remove donuts from the oil and place them on a wire rack to drain.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth.
- Dip each donut into the chocolate glaze, letting any excess drip off.
- Immediately sprinkle with rainbow sprinkles before the glaze sets.
- Let the glaze set for about 15-20 minutes before enjoying.
Notes
- Ensure the oil is not too hot, or the donuts will brown too quickly on the outside and remain uncooked inside.
- You can customize the toppings with chopped nuts, shredded coconut, or other candies.
- These donuts are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
