Ingredients

  • 1/4 cup granulated sugar
  • 1/2 cup water

  • 1 teaspoon baking powder

  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • 1/4 cup rainbow sprinkles


Instructions

  1. In a bowl, whisk together glutinous rice flour, sugar, baking powder, and salt.
  2. Add water and vegetable oil to the dry ingredients. Mix until a smooth dough forms.
  3. Knead the dough for 2-3 minutes until it’s pliable.
  4. Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it slightly and poke a hole in the center to form a donut shape.
  5. Heat about 2 inches of vegetable oil in a pot over medium heat.
  6. Carefully fry the donuts for 2-3 minutes per side, until golden brown.
  7. Remove donuts from the oil and place them on a wire rack to drain.
  8. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth.
  9. Dip each donut into the chocolate glaze, letting any excess drip off.
  10. Immediately sprinkle with rainbow sprinkles before the glaze sets.
  11. Let the glaze set for about 15-20 minutes before enjoying.
