Ingredients

  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened flaked coconut
  • 1/4 cup sweetened condensed milk
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, sugar, and salt.
  3. Cut in the softened butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the vanilla extract. Press this mixture firmly and evenly into the bottom of the prepared pan. This is your base layer.
  5. Bake the base for 15 minutes, or until lightly golden brown around the edges.
  6. While the base bakes, prepare the coconut filling. In a separate bowl, combine the flaked coconut and sweetened condensed milk. Mix well until the coconut is fully coated.
  7. Remove the base from the oven. Spread the coconut mixture evenly over the hot base layer.
  8. Return the pan to the oven and bake for another 12-15 minutes, until the coconut is golden brown. Watch it closely so it does not burn.
  9. Remove from the oven and let the bars cool completely in the pan on a wire rack. This cooling time is important for clean cutting and coating.
  10. Once completely cool, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  11. Lift the cooled bars out of the pan using the parchment paper overhang. Cut the large slab into individual bars.
  12. Dip the bottom or top of each bar into the melted chocolate, or drizzle the chocolate over the top.
