Description

These chocolate protein muffins are a perfect way to enjoy a sweet treat while getting a boost of protein. Made with cocoa powder and protein powder, they offer a rich chocolate flavor balanced with just the right amount of sweetness.


Ingredients

  • 1/2 cup protein powder (chocolate or unflavored)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup unsweetened applesauce or mashed banana
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, protein powder, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, applesauce or mashed banana, melted oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the chocolate chips, if using.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Adjust the sweetness to your liking. If your protein powder is very sweet, you might reduce the sugar slightly.
  • For a deeper chocolate flavor, use dark cocoa powder.
