- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 scoop (about 30g) chocolate protein powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/3 cup honey or maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
- In a separate bowl, whisk together the applesauce, honey or maple syrup, milk, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips, if using.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer chocolate flavor, use dark cocoa powder.
- Adjust the sweetness by adding a little more or less honey/maple syrup to your preference.
- You can substitute almond flour or whole wheat flour for all-purpose flour, but the texture may vary.
