Overnight Cinnamon Roll French Toast Casserole

Description

A simple, make-ahead breakfast casserole that combines the flavor of cinnamon rolls with the texture of baked French toast, using pre-made cinnamon rolls for ease.


Ingredients

  • 1 (12.4 ounce) package refrigerated cinnamon rolls (about 8 rolls)
  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar, packed


Instructions

  1. Lightly grease a 9×9 inch baking dish.
  2. Cut each refrigerated cinnamon roll into quarters. Arrange the pieces evenly in the prepared baking dish.
  3. In a medium bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and ground cinnamon until well combined.
  4. Pour the egg mixture evenly over the cinnamon roll pieces in the baking dish. Gently press the pieces down to ensure they absorb the custard.
  5. In a small bowl, mix the melted butter and brown sugar together until combined. Drizzle this mixture over the top of the casserole.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  7. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  8. Bake for 30 to 35 minutes, or until the casserole is puffed and golden brown in the center.
  9. Let the casserole cool for 5 minutes before serving. Drizzle the icing packets that came with the rolls over the warm casserole before serving.

Notes

  • If you prefer a crispier top, uncover the casserole for the last 10 minutes of baking.
  • You can substitute brioche bread cubes for the refrigerated rolls if you prefer to make it completely from scratch.
  • This recipe works well with Hawaiian rolls as an alternative base.
