Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the grated zucchini.
  7. Pour the batter into the prepared loaf pan.
  8. To make the streusel topping, combine the flour, brown sugar, and cinnamon in a small bowl.
  9. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  10. Sprinkle the streusel topping evenly over the zucchini bread batter.
  11. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
