Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, oil (or melted butter), and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix; a few lumps are okay.
  5. Fold in the chocolate chips. To help prevent sinking, you can toss the chocolate chips with a tablespoon of flour before adding them to the batter.
