Description
A classic Cobb salad featuring grilled chicken, crisp greens, and traditional toppings.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 head romaine lettuce, chopped
- 4 hard-boiled eggs, chopped
- 6 slices bacon, cooked and crumbled
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese
- For the dressing: 1/4 cup red wine vinegar, 1/2 cup olive oil, 1 tsp Dijon mustard, salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Grill until cooked through, about 6-8 minutes per side. Let rest, then slice or dice.
- Arrange chopped romaine lettuce on a large platter or in individual bowls.
- Create rows or sections on top of the lettuce with the chopped hard-boiled eggs, crumbled bacon, diced avocado, halved cherry tomatoes, and crumbled blue cheese.
- Top the salad with the sliced or diced grilled chicken.
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad just before serving.
Notes
- You can use a grill pan or bake the chicken if grilling is not an option.
