Description

A simple and delicious pecan pie cobbler with a gooey center.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 cup chopped pecans
  • 1 cup packed light brown sugar
  • 1 1/2 cups hot water


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into an ungreased 8×8 inch baking dish.
  6. Sprinkle the chopped pecans evenly over the batter.
  7. In a small bowl, combine the brown sugar and hot water, stirring until the sugar is mostly dissolved.
  8. Carefully pour the brown sugar mixture over the pecan layer. Do not stir.
  9. Bake for 35-40 minutes, or until the top is golden brown and the center is gooey.
  10. Let cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream for an extra treat.
  • You can substitute other nuts for pecans if desired.
  • For a richer flavor, use dark brown sugar instead of light brown sugar.
