Description
A simple and delicious pecan pie cobbler with a gooey center.

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 cup chopped pecans
- 1 cup packed light brown sugar
- 1 1/2 cups hot water
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into an ungreased 8×8 inch baking dish.
- Sprinkle the chopped pecans evenly over the batter.
- In a small bowl, combine the brown sugar and hot water, stirring until the sugar is mostly dissolved.
- Carefully pour the brown sugar mixture over the pecan layer. Do not stir.
- Bake for 35-40 minutes, or until the top is golden brown and the center is gooey.
- Let cool slightly before serving.
Notes
- Serve warm with vanilla ice cream for an extra treat.
- You can substitute other nuts for pecans if desired.
- For a richer flavor, use dark brown sugar instead of light brown sugar.
