- 1/4 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro

- Pinch of cayenne pepper (optional)
Instructions
- Preheat your grill to medium-high heat.
- Brush the corn with olive oil. Grill for 8-10 minutes, turning occasionally, until kernels are tender and slightly charred.
- In a small bowl, mix together mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using).
