Description

Enjoy the vibrant flavors of classic grilled elote, a beloved Mexican street corn dish. This recipe makes it easy to recreate this favorite at home.

Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil. Grill for 8-10 minutes, turning occasionally, until kernels are tender and slightly charred.
  3. In a small bowl, mix together mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using).
  4. Spread the mayonnaise mixture evenly over the grilled corn.
  5. Serve immediately.

Notes

  • Cotija cheese can be substituted with feta cheese if cotija is unavailable.
  • For a spicier kick, add more chili powder or cayenne pepper to the mayonnaise mixture.
  • Elote can also be prepared by boiling or roasting the corn if grilling is not an option.
