- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup white vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped celery
- 1/2 cup chopped red onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped pimientos (optional)
Instructions
- Cook macaroni according to package directions. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
- Add the cooked and cooled macaroni, celery, red onion, green bell pepper, and pimientos (if using) to the bowl.
- Gently mix until everything is coated in the dressing.
- Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.

- For best flavor, make the salad a day ahead.
- Adjust the amount of sugar and vinegar to your taste.
- You can add other vegetables like shredded carrots or peas.
