Description

A classic macaroni salad perfect for potlucks and gatherings, featuring tender macaroni, crisp vegetables, and a creamy dressing.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped pimientos (optional)

Instructions

  1. Cook macaroni according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper.
  3. Add the cooked and cooled macaroni, celery, red onion, green bell pepper, and pimientos (if using) to the bowl.
  4. Gently mix until everything is coated in the dressing.
  5. Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For best flavor, make the salad a day ahead.
  • Adjust the amount of sugar and vinegar to your taste.
  • You can add other vegetables like shredded carrots or peas.
  • If the salad seems dry after chilling, stir in a little more mayonnaise or milk.
