Description

Make these rich, boozy bourbon balls using vanilla wafers and pecans. This is a simple, no-bake recipe perfect for holiday gatherings.


Ingredients

  • 1 cup finely crushed vanilla wafer cookies (about 30 cookies)
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar, plus extra for rolling
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup good quality bourbon
  • 1 teaspoon vanilla extract


Instructions

  1. Place the crushed vanilla wafers, chopped pecans, 1 cup of powdered sugar, and cocoa powder into a medium bowl. Mix these dry ingredients together well.
  2. Add the bourbon and vanilla extract to the dry mixture. Stir until everything is thoroughly combined and a stiff dough forms.
  3. Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This makes rolling easier.
  4. Place extra powdered sugar onto a small plate or shallow bowl.
  5. Scoop out small amounts of the chilled mixture (about 1 teaspoon) and roll them between your palms to form tight balls.
  6. Roll each ball in the reserved powdered sugar until fully coated.
  7. Store the finished bourbon balls in an airtight container in the refrigerator.

Notes

  • For a stronger bourbon flavor, you can slightly reduce the amount of powdered sugar and increase the bourbon by one tablespoon.
  • If the mixture seems too dry to hold a shape, add a few drops more bourbon. If it is too sticky, add one tablespoon of extra powdered sugar.
