- 1 cup finely chopped pecans
- 1 cup powdered sugar, plus extra for rolling
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup good quality bourbon
- 1 teaspoon vanilla extract
Instructions
- Place the crushed vanilla wafers, chopped pecans, 1 cup of powdered sugar, and cocoa powder into a medium bowl. Mix these dry ingredients together well.
- Add the bourbon and vanilla extract to the dry mixture. Stir until everything is thoroughly combined and a stiff dough forms.
- Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This makes rolling easier.
- Place extra powdered sugar onto a small plate or shallow bowl.
- Scoop out small amounts of the chilled mixture (about 1 teaspoon) and roll them between your palms to form tight balls.
- Roll each ball in the reserved powdered sugar until fully coated.
- Store the finished bourbon balls in an airtight container in the refrigerator.
Notes
- For a stronger bourbon flavor, you can slightly reduce the amount of powdered sugar and increase the bourbon by one tablespoon.
- If the mixture seems too dry to hold a shape, add a few drops more bourbon. If it is too sticky, add one tablespoon of extra powdered sugar.
- These confections keep well for up to two weeks when stored properly in the refrigerator.
