  3. In a separate medium bowl, whisk the egg, buttermilk, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the shredded zucchini until evenly distributed.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
