Ingredients

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and grated ginger, and cook for 1 minute more until fragrant.
  4. Add curry powder, cumin, turmeric, and cayenne pepper (if using), and stir for 30 seconds until spices are fragrant.
  5. Pour in the coconut milk, diced tomatoes, and rinsed chickpeas.
  6. Bring the mixture to a simmer, then reduce heat and let it cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Season with salt to taste.
  8. Serve hot over cooked rice, garnished with fresh cilantro.
