Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)


Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the onion to the skillet and cook until softened, about 3 minutes.
  4. Add the garlic and ginger to the skillet and cook for 1 minute until fragrant.
  5. Pour in the coconut milk, lime juice, and lime zest. Bring the mixture to a gentle simmer.
  6. Whisk the cornstarch slurry into the simmering sauce. Stir constantly until the sauce thickens slightly, about 1 minute.
  7. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Cook for 2-3 minutes until the chicken is heated through.
  8. Remove the skillet from the heat. Garnish with fresh cilantro and serve immediately with lime wedges.

  • For a lower-carb option, skip the cornstarch slurry and let the sauce reduce naturally until thick enough.
  • Serve this chicken over rice, quinoa, or cauliflower rice.
