Simple Cottage Cheese Alfredo Sauce

Description

A quick and easy sauce made with cottage cheese for a lighter take on traditional Alfredo.


Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Melt butter in a small saucepan over medium heat.
  2. Add minced garlic and cook for one minute until fragrant.
  3. Add cottage cheese and milk to the saucepan.
  4. Stir constantly and heat gently until the mixture begins to warm through. Do not boil.
  5. Remove from heat and transfer the mixture to a blender or use an immersion blender.
  6. Blend until completely smooth.
  7. Return the smooth sauce to the saucepan.
  8. Stir in Parmesan cheese until melted and combined.
  9. Season with salt and pepper to your taste.
  10. Toss with your favorite cooked pasta.

Notes

  • For a thinner sauce, add a splash more milk while blending.
  • You can add a pinch of nutmeg for deeper flavor.
  • Use whole milk cottage cheese for a richer texture.
