Description
A quick and easy sauce made with cottage cheese for a lighter take on traditional Alfredo.
Ingredients

- 1 cup low-fat cottage cheese
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- Salt to taste
- Black pepper to taste
Instructions
- Melt butter in a small saucepan over medium heat.
- Add minced garlic and cook for one minute until fragrant.
- Add cottage cheese and milk to the saucepan.
- Stir constantly and heat gently until the mixture begins to warm through. Do not boil.
- Remove from heat and transfer the mixture to a blender or use an immersion blender.
- Blend until completely smooth.
- Return the smooth sauce to the saucepan.
- Stir in Parmesan cheese until melted and combined.
- Season with salt and pepper to your taste.
- Toss with your favorite cooked pasta.
Notes
- For a thinner sauce, add a splash more milk while blending.
- You can add a pinch of nutmeg for deeper flavor.
- Use whole milk cottage cheese for a richer texture.
