Description
Make this creamy, high-protein chicken salad using cottage cheese instead of mayonnaise. It is quick, requires no cooking if you use pre-cooked chicken, and is perfect for healthy lunches or meal prep.
Ingredients
Scale
- 2 cups cooked, shredded chicken (rotisserie chicken works well)
- 1 cup low-fat cottage cheese
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and black pepper to taste
Instructions
- Place the shredded chicken in a medium mixing bowl.
- Add the cottage cheese, chopped celery, minced red onion, fresh dill, Dijon mustard, and lemon juice to the bowl.
- Use a fork or a hand mixer on low speed to gently combine the ingredients until the mixture is creamy but still has some texture from the chicken pieces. Do not overmix.
- Taste the salad and season generously with salt and black pepper.
- Cover the bowl and chill in the refrigerator for at least 15 minutes to allow the flavors to blend. This step is great for meal prep.
- Serve your high-protein chicken salad on lettuce wraps, whole-grain bread, or with crackers.
Notes
- For a smoother texture, blend the cottage cheese separately until completely smooth before mixing it with the chicken.
- If you want a low-carb chicken salad, serve this over a bed of mixed greens instead of bread.
- This recipe is excellent for easy meal prep; it keeps well in the refrigerator for up to four days.
- Add 1/4 cup of halved grapes or chopped pecans for extra crunch and sweetness if desired.
