- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon curry powder
- 1 teaspoon ground cumin

- 1/4 teaspoon cayenne pepper (optional)
- 1 (13.5 ounce) can full-fat coconut milk
- 1 (15 ounce) can pumpkin puree
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped fresh spinach
- 1/4 cup chopped fresh cilantro, for garnish
- Cooked rice, for serving
Instructions
- Heat coconut oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger, and cook for 1 minute more until fragrant.
- Stir in curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Pour in coconut milk, pumpkin puree, and vegetable broth. Stir until well combined.
- Bring the mixture to a simmer, then reduce heat to low. Stir in soy sauce, maple syrup, salt, and pepper.
- Let the curry simmer gently for 10-15 minutes, stirring occasionally, to allow the flavors to meld.
- Stir in fresh spinach and cook until wilted, about 1-2 minutes.
- Serve hot over cooked rice, garnished with fresh cilantro.
Notes
- For a spicier curry, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute sweet potato puree for pumpkin puree if desired.
- Feel free to add other vegetables like chopped bell peppers or broccoli florets.
