  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped fresh spinach
  • 1/4 cup chopped fresh cilantro, for garnish
  • Cooked rice, for serving


Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger, and cook for 1 minute more until fragrant.
  3. Stir in curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Pour in coconut milk, pumpkin puree, and vegetable broth. Stir until well combined.
  5. Bring the mixture to a simmer, then reduce heat to low. Stir in soy sauce, maple syrup, salt, and pepper.
  6. Let the curry simmer gently for 10-15 minutes, stirring occasionally, to allow the flavors to meld.
  7. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  8. Serve hot over cooked rice, garnished with fresh cilantro.

Notes

  • For a spicier curry, add more cayenne pepper or a pinch of red pepper flakes.
  • You can substitute sweet potato puree for pumpkin puree if desired.
