Description
Make simple, festive Cranberry Brie Bites using puff pastry. These appetizers are quick to put together for any holiday gathering.

- 1 sheet frozen puff pastry, thawed
- 8 ounces Brie cheese, rind removed and cut into small cubes
- 1/4 cup cranberry sauce
- 1 egg, beaten (for egg wash)
- Optional: chopped pecans or fresh rosemary for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Lightly flour your work surface. Unfold the thawed puff pastry sheet.
- Use a round cookie cutter (about 2 inches) to cut out circles from the pastry. You should get about 12-16 circles.
- Place the pastry circles on the prepared baking sheet.
- Top each circle with a small cube of Brie cheese.
- Place about 1/2 teaspoon of cranberry sauce on top of the Brie on each pastry circle.
- Brush the edges of the pastry circles lightly with the beaten egg wash.
- Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven. If desired, top immediately with chopped pecans or a tiny sprig of rosemary.
- Serve warm.
Notes
- If you do not have a cookie cutter, you can carefully cut the pastry into 2-inch squares.
- Make sure the Brie is cold when you cut it; this helps it hold its shape slightly before baking.
- You can use homemade or store-bought cranberry sauce.
- These are best served fresh from the oven.
