Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Add the orange zest. Stir gently until just combined. Do not overmix; a few lumps are okay.
  5. Gently fold in the chopped cranberries.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. If desired, lightly brush the tops of the muffins with orange juice for extra shine and flavor.
  8. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
