Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together cranberry sauce, orange juice, soy sauce, Dijon mustard, minced garlic, and rosemary. Season with salt and pepper.
- Pat the pork tenderloin dry with paper towels and season lightly with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
- Pour the cranberry-orange sauce over the pork tenderloin in the skillet.
- Transfer the skillet to the preheated oven.
- Roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
- Let the pork rest for 5-10 minutes before slicing.
