Description
Make this Creamy Cajun Chicken Pasta for a comforting meal with the perfect balance of spice and richness. It tastes like you spent all day cooking, but it is simple to prepare.
Ingredients
- Chicken breasts: 1.5 lbs, cut into bite-sized pieces
- Pasta (penne or fettuccine): 12 oz
- Butter: 3 tablespoons
- Garlic: 3 cloves, minced
- Cajun seasoning: 2 tablespoons (adjust to your spice preference)
- Chicken broth: 1 cup
- Heavy cream: 1 cup
- Parmesan cheese: 1 cup, freshly grated
- Red bell pepper: 1, thinly sliced
- Onion: 1/2, chopped
- Olive oil: 1 tablespoon
- Salt and black pepper: To taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken pieces generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
- In the same skillet, melt the butter. Add onion and red bell pepper and cook until softened, about 5 minutes.
- Stir in minced garlic and Cajun seasoning. Cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
- Reduce heat to low. Stir in heavy cream until the sauce is smooth.
- Gradually whisk in the grated Parmesan cheese until the sauce is creamy and thick. Do not let it boil.
- Return the cooked chicken and the drained pasta to the skillet. Toss everything together until well coated in the sauce.
- Heat through for 1-2 minutes. Taste and add more salt, pepper, or Cajun seasoning if you want more spice.
- Serve immediately. Enjoy your cozy meal!
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sauce.
- If the sauce seems too thick, add a splash more chicken broth or cream to reach your desired consistency.
- Feel free to add cooked spinach or mushrooms for extra vegetables.
