Description

Make this Creamy Cajun Chicken Pasta for a comforting meal with the perfect balance of spice and richness. It tastes like you spent all day cooking, but it is simple to prepare.

Ingredients

  • Chicken breasts: 1.5 lbs, cut into bite-sized pieces
  • Pasta (penne or fettuccine): 12 oz
  • Butter: 3 tablespoons
  • Garlic: 3 cloves, minced
  • Cajun seasoning: 2 tablespoons (adjust to your spice preference)
  • Chicken broth: 1 cup
  • Heavy cream: 1 cup
  • Parmesan cheese: 1 cup, freshly grated
  • Red bell pepper: 1, thinly sliced
  • Onion: 1/2, chopped
  • Olive oil: 1 tablespoon
  • Salt and black pepper: To taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken pieces generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  4. In the same skillet, melt the butter. Add onion and red bell pepper and cook until softened, about 5 minutes.
  5. Stir in minced garlic and Cajun seasoning. Cook for 1 minute until fragrant.
  6. Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  7. Reduce heat to low. Stir in heavy cream until the sauce is smooth.
  8. Gradually whisk in the grated Parmesan cheese until the sauce is creamy and thick. Do not let it boil.
  9. Return the cooked chicken and the drained pasta to the skillet. Toss everything together until well coated in the sauce.
  10. Heat through for 1-2 minutes. Taste and add more salt, pepper, or Cajun seasoning if you want more spice.
  11. Serve immediately. Enjoy your cozy meal!

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sauce.
  • If the sauce seems too thick, add a splash more chicken broth or cream to reach your desired consistency.
  • Feel free to add cooked spinach or mushrooms for extra vegetables.
