Ingredients
- Chicken breasts, cooked and shredded (2 cups)
- Uncooked long-grain white rice (1 cup)
- Cream of chicken soup (1 can, 10.5 oz)
- Milk (1 cup)
- Chicken broth (1 cup)
- Shredded cheddar cheese (1 cup)
- Frozen mixed vegetables (1 cup)
- Onion, chopped (1/2 cup)
- Butter (2 tablespoons)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, milk, chicken broth, frozen vegetables, and chopped onion.
- Stir well until all ingredients are evenly mixed. Season with salt and pepper.
- Pour the mixture into the prepared baking dish.
- Cover the dish tightly with aluminum foil.
- Bake for 50 minutes.
- Remove the foil and sprinkle the shredded cheese evenly over the top.
- Return the casserole to the oven, uncovered, and bake for another 10-15 minutes, or until the rice is tender and the cheese is melted and bubbly.
