- 2 pounds boneless, skinless chicken breasts
- 1 cup wild rice blend, uncooked
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup milk
- 1/4 cup all-purpose flour
- 2 tablespoons butter
Instructions
- Place chicken breasts in the slow cooker.
- Add wild rice blend, carrots, celery, onion, garlic, chicken broth, salt, pepper, and thyme to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and rice is tender.
- Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
- In a small bowl, whisk together milk and flour until smooth.
- Stir the milk mixture into the slow cooker.
- Cook on high for another 30 minutes, or until the soup has thickened.
- Melt butter in a small skillet. Add flour and cook, stirring, for 1 minute. Gradually whisk in milk until smooth.
- Stir the thickened mixture into the soup.
- Serve hot.
Notes
- For a thicker soup, you can use 2 tablespoons of cornstarch mixed with 2 tablespoons of cold water instead of the milk and flour mixture.
- Feel free to add other vegetables like peas or mushrooms.
- This soup can be made ahead and reheated.
