Description

This creamy corn chowder is a hearty and comforting soup, perfect for a cozy meal. It features sweet corn kernels in a rich, creamy base.


Ingredients

  • 6 slices bacon, diced
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups fresh or frozen corn kernels
  • 1 large potato, peeled and diced
  • 1/2 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh chives or parsley for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chicken broth, corn kernels, diced potato, and dried thyme. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
  4. In a small bowl, whisk together the flour and 1/2 cup of the milk until smooth. Slowly whisk this mixture into the simmering chowder.
  5. Gradually stir in the remaining milk and heavy cream. Continue to cook, stirring occasionally, until the chowder thickens, about 5-10 minutes. Do not boil once the cream is added.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with the reserved crispy bacon and fresh chives or parsley, if desired.

Notes

  • For a smoother chowder, you can use an immersion blender to blend a portion of the soup before adding the milk and cream.
  • You can use vegetable broth for a vegetarian option, omitting the bacon.
  • Fresh corn cut from the cob will give the best flavor, but frozen corn works well too.
