Ingredients

  • 6 slices bacon, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups corn kernels (fresh, frozen, or canned)
  • 4 cups chicken or vegetable broth
  • 2 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Fresh chives or parsley, for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the corn kernels, broth, and diced potatoes. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
  4. While the soup simmers, in a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.
  5. Gradually whisk the milk into the roux until smooth. Cook for 2-3 minutes, stirring constantly, until the mixture thickens slightly.
  6. Pour the thickened milk mixture into the soup, stirring well to combine. Stir in the heavy cream.
  7. Season the chowder with salt and black pepper to taste.
  8. Serve hot, garnished with the crispy bacon and fresh chives or parsley, if desired.

Notes

  • For a smoother chowder, you can use an immersion blender to blend a portion of the soup before adding the cream.
