A straightforward recipe for creamy corn soup.
Ingredients

- 4 cups chicken broth
- 2 cups fresh or frozen corn kernels
- 1 cup milk or cream
- 2 tablespoons butter
- 1 small onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Melt butter in a pot over medium heat.
- Add chopped onion and cook until soft, about 5 minutes.
- Pour in chicken broth and add corn kernels. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Remove soup from heat. Use an immersion blender or carefully transfer to a regular blender to blend until smooth.
- Return soup to the pot. Stir in milk or cream, salt, and pepper.
- Heat through gently without boiling. Serve hot.
Notes
- For a thicker soup, reserve 1/2 cup of corn kernels before blending and stir them back in after heating.
- Garnish with fresh chives if desired.
