Description

A straightforward recipe for creamy corn soup.


Ingredients

Scale
  • 4 cups chicken broth
  • 2 cups fresh or frozen corn kernels
  • 1 cup milk or cream
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Melt butter in a pot over medium heat.
  2. Add chopped onion and cook until soft, about 5 minutes.
  3. Pour in chicken broth and add corn kernels. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Remove soup from heat. Use an immersion blender or carefully transfer to a regular blender to blend until smooth.
  6. Return soup to the pot. Stir in milk or cream, salt, and pepper.
  7. Heat through gently without boiling. Serve hot.

Notes

  • For a thicker soup, reserve 1/2 cup of corn kernels before blending and stir them back in after heating.
