Ingredients

  • 1 pound mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 cups vegetable broth
  • 1 cup egg noodles
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
  2. Add onion and cook until softened, about 3-4 minutes.
  3. Stir in garlic, thyme, paprika, pepper, and salt. Cook for 1 minute until fragrant.
  4. Pour in vegetable broth and bring to a boil.
  5. Stir in egg noodles. Reduce heat, cover, and simmer for 10-12 minutes, or until noodles are tender and sauce has thickened.
  6. Remove from heat. Stir in sour cream and fresh parsley until well combined.
  7. Serve immediately.
